Description
Bigleaf maple (Acer macrophyllum) grows across the Willamette Valley, and until recently almost nobody tapped it. We do. Sap is collected in the winter months, concentrated by reverse osmosis, then boiled to 66% sugar and bottled by hand. Nothing added.
Each season’s run is small and tastes a little different from the last. This year’s syrup is our sweetest and smoothest yet: dark amber, robust, with notes of chocolate, caramel and toasted brown sugar.
